"Launching May 20 and running through mid-September in the Outlook Kitchen space at the Envoy Hotel, this summer pop-up from executive chef Tatiana Rosana (named for her grandmother) serves a menu packed with tacos, ceviche, quesadillas, elotes and plenty of tequila. Much of the menu is drawn from the Cuban-American food Rosana grew up eating in Miami — she says her grandmother “is a big fan of ceviche,” so ceviche is on the menu — and includes family recipes such as mojo pork carnitas tacos based on their Nochebuena tradition of roasting a whole pig over an open fire and basting it with giant batches of mojo sauce. The concept emphasizes small plates meant for sharing, born from Rosana’s desire to recreate the feeling of cooking with and gathering around loved ones after a year of limited interaction." - Terrence Doyle
