"Submarine Hospitality co-founder Luke Dirks opened L’Echelle, a restaurant which he collaborated on with the late chef Naomi Pomeroy, as a pop-up, which will run until early next year when its permanent space is completed. The restaurant’s name is French for “the ladder” — it serves French bistro plates such as country rabbit and hazelnut pate, porc roti with chanterelles, and marinated leeks with summer squash confit and fromage blanc." - Rebecca Roland
