"At Madras, the namesake dosas come large, crispy, and filled to the brim with pick-your-own stuffings like spicy potatoes, paneer, and a crunchy sprinkling of Lays. Each dosa arrives with three sauces on the side: coconut chutney, ginger chutney, and sambar. There’s also paniyaram (pan-roasted dumplings made with rice and lentils), idly (steamed rice and lentil cakes), and a variety of chaat to round out each order.
