"Started as a pop-up and turned restaurant six months ago on Morrison, Jewan Manuel’s Plant Based Papi serves vegan comfort foods ranging from Nashville fried chicken sandwiches to mac-and-cheese tacos and mushroom scallop alfredo; Manuel is renovating the Morrison shop to better accommodate walk-ups while expanding into new neighborhoods with a three-month chef residency at Bit House Collective and a kitchen takeover at Fortune in the Sentinel hotel. The Bit House sit-down experience will include crispy birria tacos, jalapeño mac and cheese, fried “chicken” sandwiches, and a birria burrito, while the Fortune menu will feature other pop-up favorites such as four-cheese pasta, Caprese burgers, the Papi Burger (Manuel’s vegan take on an In‑N‑Out burger), and vegan fried “chicken” made with battered, deep-fried jackfruit, plus new sides like Texas toast using Dos Hermanos bread with house-made agave-coconut “honey” butter and desserts like cinnamon roll sticky buns and ice cream; Manuel is intentionally keeping some signature tacos reserved for his own restaurant and the Bit House residency.
