One of London’s Best Cocktail Bars Is Opening on Borough High Street | Eater London

"Reputed as one of London's top cocktail destinations, this operation is celebrated for its understated elegance and particularly praised Irish coffees. A third site will open at 66 Borough High Street in October, occupying a two-floor layout modeled on the original location: classic cocktails served upstairs for walk-ins, with a more exclusive downstairs room offering a tighter, more singular menu. The Borough opening follows a Shoreditch outpost launched in July 2020, and the team plans a monthly specials programme drawing on producers and grocers from the historic market nearby. The project is a joint venture between Bobby Hiddleston and Mia Johannson (with experience at Callooh Callay and New York’s Dead Rabbit) together with Nightjar founders Edmund Weil and Rosie Stimpson; the original venue opened in 2016." - James Hansen
