"This historic Golden saloon opened in 1859 and its eye-popping story includes stints as a barber shop and a swimming pool known as the Golden Plunge. The sprawling space (created by combining five buildings) was updated in 2019 to include more venue options. Buffalo Rose now features a huge outdoor patio with fire pits and a retractable roof that’s a hub for genre-spanning live music, while indoors, the spacious dining room has an Old West vibe (it is one of the state’s oldest saloons, after all). Regardless of where you choose to sit, there are ample options on the menu, which looks like an old-timey newspaper. The elevated bar food offerings are a mashup of Colorado cuisine with Latin flair: think bison burgers, elk chorizo empanadas, green chile artichoke dip, and cornmeal-dusted rainbow trout." - Rebecca Treon
