"A dedicated quick-service sandwich shop opening at Sylvan Thirty will occupy a 1,400-square-foot space designed by Coeval Studio and seat roughly 50 diners, including an enclosed arched trellis patio. The interior will pair an industrial vibe with French touches meant to evoke the nostalgia of a train station, and service will be counter-style with a self-ordering kiosk. The menu centers on bánh mì—notably versions piled with five-spice pork belly, pickled vegetables, jalapeño, and cucumber—but also includes alternative proteins like ginger-turkey meatballs, brisket, lemongrass chicken, and smoked pulled pork, plus sides and small plates such as steamed bao, pulled pork–topped kimchi fries, and Thai curry mac and cheese.
