"Planned to open in late 2023 at the Arboretum of South Barrington, this 10,000-square-foot concept (including about 3,000 square feet of private event space for 80–100) aims to be an enduring suburban gathering place. Founded by longtime restaurant operators who want a community-focused spot, it will center on a live-fire hearth and an open kitchen for dramatic visuals, offering a broad menu that ranges from casual burgers at the bar to fine steakhouse cuts, roasted meats, whole fish and expanded seafood options. The team plans tableside presentations (including a memorable steak tartare), daily-drawn fresh fish flown from Spain and Greece, and steaks sourced from small farms. Service will begin with dinner and test brunch, while the beverage program will emphasize American wines and inventive cocktails as a differentiator. The operators expect design and operational challenges during quieter periods and plan a hands-on, front-of-house presence to foster regulars and special-occasion diners alike." - Sam Nelson
