"Once the flagship of the late, legendary chef Paul Bocuse and holder of an uninterrupted three-Michelin-star run since 1965—the longest current streak in the world—this Collonges-au-Mont-d’Or institution was demoted to two stars in the 2020 Michelin Guide after inspectors judged it no longer at three-star level. The decision came two years after Bocuse’s death at 91 and followed the unveiling of a new menu and tasting experience called “Tradition on the Move,” which the restaurant says was introduced after the Michelin judging window and will be fully revealed when it reopens after renovation.
