"A fully vegan, koshari-focused operation run by mother-and-daughter Sahar Ahmed and Dina Fahim, this restaurant grew from a launch at Mill No. 5 in Lowell and a long Bow Market pop-up (since late 2019) into a permanent Somerville location. The menu centers on the Egyptian staple koshari (a mix of rice, lentils, pasta, and more) and at Bow Market also included playful items like a roasted eggplant sub and a spicy “chicken” sandwich made from cauliflower with creamy garlic sauce; the permanent 585 Somerville Ave. space will allow the team to expand with more Egyptian dishes and their own twists. The owners emphasize offering delicious, nutritious food for groups and newcomers alike; takeout and delivery are rolling out first with a full opening planned for November." - Rachel Leah Blumenthal
