"Opened in mid-September at 21788 Katy Freeway, this Nashville-style hot chicken shop serves hot chicken and waffles, a signature 'Fires' item topped with white-cheddar mac and cheese, chicken and pickles, and a spicy chicken sandwich offered in five heat levels — Country (no heat) up to Fire in The Hole (the hottest). The menu also includes sweet cream frozen custard in waffle cones and shakes. Founder Brandon Charles, a longtime restaurant franchisee from Hempstead, says he was inspired by a chicken-and-waffle sandwich he tried in Las Vegas and ran more than 60 cooking experiments to perfect juicy, flavorful chicken with the crunchy, spicy breading Nashville hot chicken is known for. He accents dishes with a family kale coleslaw recipe, extra-thick pickles, a special secret sauce, and brioche buns from a local bakery, reflecting his meticulous approach. After a successful first month the owner is already considering expansion, adding another option to Houston’s growing hot-chicken scene alongside places like Mico’s, Main Chick, and Rosalyn’s." - Brittanie Shey
