"I watched what at first looked like a Mister Softee truck become a mobile knife shop where customers line up with cooking knives for sharpening instead of ice cream; launched last fall by Ryan White and Patrick Bradley after careers as Directors of Photography, the truck has been parking around Greenpoint and Williamsburg and even had Bill Murray as its first customer when it was in front of 21 Greenpoint. I found they sharpen far more than kitchen knives — florist shears, barbershop scissors, paper cutters, and leather and woodworker tools — and do charity work for firehouse and soup kitchens. Their setup is thoughtful and old-school: traditional whetstone techniques, low-RPM belt grinders to avoid overheating, water-cooled Tormek machines, leather finishing, files, and polishing, all guided by the principle of taking off the least amount of material and preserving bevels (50/50 or 70/30) rather than being overly aggressive. They’ve outfitted the truck with solar panels that charge marine batteries to power the machines, customize their approach to each blade, sell high-end Japanese Kikuichi knives and kitchen goods, and are building an online shop with items from about $65 up to $2,000; follow their social media for locations or arrange pickups." - Emma Orlow
