The takeout-only, 853-square-foot operation is run by Santa Monica residents Brittany and Terrence Caldwell, who launched the meatless deli because plant-based submarine sandwiches are hard to find in Los Angeles; they describe the concept as a mashup of neighboring deli Bay Cities (for the critical elements of a great deli) and Erewhon (for its trustworthiness). The menu avoids alternative meat products in favor of vegetables and familiar ingredients—think marinated artichokes instead of fake-meat imitations—with Brittany’s favorite, the Wanda (marinated eggplant), and Terrence’s Old Sport, a riff on the classic chicken salad sandwich.
