"I learned that former Bivouac Ciderworks chef DJ Tangalin is launching his debut solo restaurant, a modern Filipino bistro called Maya Eatery that he hopes to open by the end of May; created with business partner Archie Soria, it will be the first of several concepts. He’s previewing the menu at pop-ups — dishes include raw fish with kalamansi and fish sauce, an ensalada with rambutan vinaigrette, and chicken inasal with sweet-and-sour bread sauce — while he secures a permanent Hillcrest location.
