"I'm looking forward to a new cheese shop slated to open along Division Street in the Richmond area; its name is a play on 'carpe diem' that translates to 'cheese the day.' It's targeting a mid-July opening though no official date has been announced, and a liquor license has been filed and is still being processed by the City of Portland. The shop plans to carry over 75 types of cheese, with 12 cheeses available to try as part of a build-your-own cheese board, and will also carry bread, cured meats, crackers, honey, and more. Before opening a storefront, owner Han Schmidt operated Caseus Diem as a cheeseboard-by-order business offering special seasonal menus and custom combinations, and Schmidt — who began working in a cheese shop in Carmel-by-the-Sea nearly a decade ago and later spent time in grocery stores — opened the shop after moving to Portland because they missed the human interaction of a specialized storefront." - Rebecca Roland
