Some experiments land beautifully — most notably the Japanese Little Neck tonjiru, a miso-forward broth thick with clams, Tuscan kale, and crumbles of coarsely ground fatty pork sausage — while other hybrids, like the carbonara ramen, read as more amusing than truly satisfying.
