"Hinodeya Ramen, a new noodle bar with a serious Japanese culinary pedigree, opens this week on Greenville Avenue. The much-anticipated restaurant is set to open its doors at 2023 Greenville Avenue this week, according to a press release, joining three other locations of Hinodeya in San Francisco. In Dallas, Hinodeya occupies a small 60-seat space decked out with stained white oak tables, a “bamboo forest” and pendant lights via San Francisco designer Hiroshi Sengoku. Attached to the restaurant is a 450 square foot patio that boast a fire pit and even more bamboo. As far as the food is concerned, only three different types of ramen will be on the menu, but they’ll each be obsessively detail-oriented. The “signature” Hinodeya bowl is topped with marinated egg, chashu pork, nori, and scallop-pork oil, while the “creamy ramen” is made with a vegan shiitake broth and spinach noodles. A few snacks, including takoyaki and fried oysters, round out the offerings. When it debuts on Wednesday, August 21, Hinodeya will be open from 6 p.m. to 10 p.m. on Sunday, Monday, Wednesday, and Thursday, and 6 p.m. to 11 p.m. on Friday and Saturday. Considering the noodleheads who have been long awaiting its arrival, get ready to wait in line at Hinodeya — it doesn’t accept reservations." - Amy McCarthy
