"I’m excited that a new noodle bar with a serious Japanese culinary pedigree opens this week at 2023 Greenville Avenue, joining three other Hinodeya locations in San Francisco. In Dallas it occupies a small 60-seat space fitted with stained white oak tables, a “bamboo forest” and pendant lights by San Francisco designer Hiroshi Sengoku, plus an attached 450-square-foot patio with a fire pit and even more bamboo. The menu is intentionally small — just three obsessively detailed ramen bowls: the “signature” Hinodeya topped with marinated egg, chashu pork, nori and scallop-pork oil, and a “creamy ramen” built on a vegan shiitake broth with spinach noodles — with a few snacks like takoyaki and fried oysters. When it debuts on Wednesday, August 21, hours will be 6 p.m. to 10 p.m. Sunday, Monday, Wednesday and Thursday and 6 p.m. to 11 p.m. Friday and Saturday; it doesn’t accept reservations, so expect to wait in line." - Amy McCarthy
