"The Butchery Quality Meats, founded in Costa Mesa in 2009, is venturing outside of Orange County to One Paseo. It offers hand cut top choice and prime beef, grass-fed beef, pork, poultry, and specialty meats including dry-aged beef, American and Japanese wagyu, bison, and venison. Known for marinated meats and sausages, it will also introduce a fresh seafood case at its North County store. The 5,000-sq-ft space includes a grocery area, a deli case, and a retail section for craft beers and wines. It will feature a full kitchen and expanded seating area with an on-site eatery and beer and wine bar serving a casual menu.
