These steamed momos are neatly wrapped in either a plain or bright green spinach dough and stuffed with savory meat (bison, chicken, or mutton), cabbage, and onion, plus fragrant ginger and spices. The dosas are feather-light and broad as a sun hat, offered in egg, masala potato, curry, and keema varieties (or get a dessert dosa stuffed with banana and chocolate ganache).
