"At 1616 Chestnut Street in Rittenhouse, I note that Dig's first Philadelphia location opens this week, offering a build-your-own-bowl menu of locally sourced meats and vegetables with several vegan and gluten-free options; after a few previews — including a day that donated proceeds to Hospitality Together — its first official day is Tuesday, January 7. The New York–based chain, which used to be called Dig Inn and counts Danny Meyer of Shake Shack among its investors, operates about 30 restaurants, runs its own farm and works with 130 other farms, and emphasizes fresh, in-season fare such as charred Brussels sprouts with honey-chili oil, roasted sweet potatoes, and a very tasty farro with butternut squash, prepared without freezers or microwaves. Leading the kitchen at the new Philly outpost are chefs de cuisine Anthony Gargano (whose résumé includes Hungry Pigeon, Barbuzzo, and Di Bruno Bros.) and Lenin Tello (who has worked in New York and Australia), with chef operator Josh Jastrzembski coming from Iron Hill Brewery & Restaurant; it's open daily from 11 a.m. to 10 p.m." - Rachel Vigoda
