"Located in Concorde Plaza at the intersection of Warm Springs Road and Jones Boulevard, Sojo Ramen occupies 1,200 square feet with light wood fixtures and a casual vibe; I note it launched less than a dozen doors from Chef John Chien Lee’s five-year-old Soho Japanese Restaurant so he won’t have far to check on its progress. Its early menu is still growing but already offers appetizers such as battered and fried tofu, crispy gyoza, kurobuta sausage, flash-fried broccoli, and pork chasu tacos. Ramen bowls with a tonkotsu base include the pork-based Sapporo butter miso, spicy “kuro-goma tantanmen,” and the “Sojo champon” with pork chasu (all $12.35 or less), and each can be upgraded with extra toppings and condiments including a “flaming” secret-recipe option.
