"A Japan-based ramen chain is opening its first Texas outpost next month at 600 North Shepherd Drive inside the up-and-coming M-K-T development, with an expected April debut. The Houston franchise is led by Christopher Lav (who brought Pokeworks to the city) and could be the first of several local locations. The menu emphasizes vegetable-based broths — from classic miso and soy to tomato — and includes a signature “pearl ramen” made with white soy sauce and specialized Japanese rock salt, plus a fully vegan option, gluten-free noodles, rice bowls, sushi, and other items that round out the selection.
