"A wildly popular U.S. chef-driven, gourmet fast-casual concept founded in 2011 by Filipino-American chef Alvin Cailan, it began as a Los Angeles food truck and opened a flagship stall in Grand Central Market in 2013 that still draws two-hour lines at peak times. The menu centers on eggs served all day, with everything made fresh to order and several highly Instagrammable signature plates — notably the Slut (a coddled egg atop smooth potato purée, poached in a glass jar with gray salt, chives and slices of baguette) and the Fairfax (a brioche sandwich with soft-scrambled eggs, chives, cheddar, caramelized onions and sriracha mayo). The brand has been positioned as pioneering a new fast-casual egg-forward category and dovetails with Cailan’s efforts to tell the story of Filipino food in L.A., including a forthcoming cookbook, Amboy, and support for an incubator that helped launch the celebrated restaurant Lasa.
