"A small-batch organic ice cream shop that opened near the University of Washington in 2016, Sweet Alchemy sources most of its ingredients from local farms and is opening a second Ballard location on Wednesday, April 10. Owner and founder Lois Ko, a UW art graduate, says this is the shop’s first expansion; the new spot will offer more vegan options and will share space and seating with Mighty-O Donuts. Sweet Alchemy emphasizes sustainability by trying to reduce food waste and by pasteurizing its dairy daily from ingredients delivered by grass-fed farms. One exclusive Ballard flavor will be a collaborative Neapolitan featuring Mighty-O’s chocolate donuts, a strawberry compote from local Shuh Farms, and organic vanilla coconut cream. The new space will also include a handcrafted waffle-cone mural made from the glass of Japanese fishing boats found along the Pacific Northwest coastline, a detail Ko hopes will help Sweet Alchemy stand out in Ballard’s crowded sweets scene." - Gabe Guarente
