"A beloved Deep Ellum ramen shop co-owned by George Itoh, who died suddenly on April 25 following a stroke. Itoh — who grew up in rural Wisconsin, began his career in sushi and hibachi restaurants, worked in New York City as a video producer and led the kitchen at an outpost of Ippudo — moved to Dallas in 2016 and opened the shop with a business partner in 2019 in the space formerly occupied by another ramen spot. The restaurant earned rave reviews for flavorful bowls featuring springy noodles and excellent garnishes. During the pandemic Itoh and his wife transitioned the business to a more mom-and-pop model, with his wife and daughters helping run operations.
