"I note that Roppolo’s Pizza opened a West Campus location at 2604 Guadalupe Street on August 21, taking over the former Fat Sal’s space. The new spot will add Italian burgers made from a recipe from founder Marc Roppolo’s mother Rosalie—thin, oversized patties seasoned with Italian seasoning on regular-sized buns—which she used to serve at his grandfather’s grocery store in Waco and on the Baylor campus, plus house-made chicken wings ranging from mild to hot. The rest of the menu follows the familiar Roppolo’s lineup: a variety of pizzas by the pie or slice (including their famous Sicilian-style pizza), calzones, rolls, pastas with a new alfredo option, and salads, with beer and wine available. A walk-up window will debut sometime after opening, and the restaurant will be revamped with new paint and four 50-inch televisions to cater to UT students who want to watch sports. Roppolo, who started the business in 1989 and already operates two Sixth Street restaurants and a Red River food truck, had long wanted a campus-area location and seized the Fat Sal’s building when it became available; the brand is described as a true Downtown Austin icon, serving its famous Sicilian-style pizza in a historic 6th Street building for over 25 years." - Nadia Chaudhury
