"Planned as a separate space steps away from Bar Diane, Negociant will be a 3,000-square-foot wine shop, market and deli at 655 NW 21st Avenue opening this quarter (ideally before the end of March). I learned it will cover the full day shift on NW 21st with a deli counter offering items like jambon-beurre and house pork terrine sandwiches, smoked trout quiche and salads, plus a dine-in menu with dishes such as French onion soup; Turner’s house-baked breads will also be sold there. The bottle selection is expected to include grower Champagne, other European wines and a substantial lineup of Pacific Northwestern wines, with a 105-square-foot “reserve cellar” for particularly special bottles; Gaston says the focus will be sustainability in viticulture, aiming for small-production wines but a little something for everybody." - Brooke Jackson-Glidden
