"Opening this summer, I'm teaming up with Nancy Silverton to open a classic diner called Max and Helen’s in the former Le Petit Greek space on Larchmont Boulevard as a passion project. I want it to look like we found a 100-year-old diner — antique fixtures and counter stools, booths, and an outdoor patio carried over from pandemic-era dining — and the goal is to elevate all the comfort-food basics (eggs, bacon, toast, potatoes, coffee) so each item is the best version you’ve ever had. Nancy will serve as executive chef and design the menu with me through lots of tasting and trial and error, and I named the restaurant for my parents, Max and Helen, as a tribute to their spirit." - Cathy Chaplin
