"At 519 Clement Street I discovered Pixlcat Coffee, a fully independent cafe opened by the Lee brothers (David, Dennis, and Daniel) that first launched downtown in April 2023 inside the Sunset Squares Foodhall and expanded to a larger Richmond location in mid-November. I was impressed by the butter mochi program — available all day at the Clement shop — which was a hit before the Richmond opening and includes seven mochi flavors (black sesame and white chocolate among them), mochi cookies, a mochi flight, and inventive riffs such as a bacon-and-cheese option. The savory lineup features spam musubi, BLT sandos, and a cinnamon tiger toast made with the brothers' burnt-turbinado "tiger" syrup. On the drinks side Pixlcat blends Asian café culture with global coffee favorites: Four Barrel Coffee roasts their beans, the house "Pixlcat Purrfect Blend" is the backbone of the menu, and offerings range from classic Americanos to coffee boba and bolder items like the Doppo Panna (a nod to the Austrian einspänner, layered almost like a parfait). Founder Dennis Lee frames the shop as a chef-driven, family project inspired in part by Roy Choi, and Pixlcat plans to ship mochi and its Purrfect Blend to customers; current hours are 7 a.m. to 5 p.m. Monday–Friday and 8 a.m. to 5 p.m. Saturday–Sunday." - Paolo Bicchieri
