"Set to be transformed into an “experiential dining compound” from August 21 through September 5, the spanking-new Heights House Hotel will host Commune, a two-week festival organized by Indie Chefs Community that brings some of the country’s best chefs to Houston. I expect the hotel to play host to omakase-style pop-up dinners (including ones from Philip Speer, Win Son’s Trigg Brown, and Tim Ma of Lucky Danger), a nightly street market with a different lineup each day, a Jewish deli pop-up from NYC pastry chef Zoe Kanan and MeMe’s Diner chef-owner Libby Willis, plus roundtable discussions and educational workshops aimed at educating diners about systemic issues facing the hospitality industry. Commune says it will cover all chef costs of participation and offer a revenue-sharing model for marquee events; tickets are slated to range from $50 to $500 and will go on sale to email list subscribers on June 24." - Amy McCarthy
