"I discovered a compact 650-square-foot, 14-seat made-to-order pasta shop and deli that opened on March 21 in Redondo Beach this spring. Pastas start at a very reasonable $9 a plate with sauces including carbonara, bolognese, marinara, zucchini and prawns, cacio e pepe, and pesto, paired with one of seven house-extruded pastas such as pappardelle, spaghetti, or linguini; customers can also take any pasta home. There are pre-made dishes like eggplant parmigiana and lasagna bolognese, plus a non-traditional gluten-free and vegan gnocchi. The Roman-style pizza is matured for 72 hours at a set temperature and available by the slice or as a full sheet, with options from a traditional margherita and a cacio e pepe to a gustosa topped with potatoes, rosemary, fontina, and pecorino. Milan-born Pacelli—making his first restaurant after 22 years working in luxury hotels (most recently as associate director of food and beverage at Terranea Resort)—runs the place; the name translates to “made by hand,” though most pastas are currently finished on an Italian-made extruder.
