"Don Wagyu, purveyor of the $180 wagyu sandwich that generated a frenzy of can-you-believe-this headlines in 2018, is back. Restaurant group Uchū Hospitality found a new home for the concept in a shared space alongside a fifth location of Uchū’s affordable, well-liked Sushi on Jones chain, at Gotham West Market, one of the fancier food halls in the city, located in Hell’s Kitchen. Both concepts share a 10-seat stall at Gotham West and somewhat of a joint menu. Customers can make a reservation for a swift 7-course ($35) or 12-course ($58) omakase, same as at any other Sushi on Jones location, and have the option of ordering off the Don Wagyu menu during the meal. However, those looking to just order Don Wagyu will only have the option to order takeout at the stall. At the new location, the reworked Don Wagyu menu features everything from Wagnuggets to a wagyu dog, a hot wagyu sandwich, and a katsu sandwich option, which will rotate on a monthly basis and is listed at market price." - Erika Adams
