New Austin Food Truck Five O Four Makes Honduran Creole Food in 2024 | Eater Austin

"An upcoming Austin food truck planned to open in fall 2024 by Chef Grace Aguilar will showcase Honduran Creole cuisine that blends her first-generation Honduran roots with the Creole flavors she grew up with in New Orleans. Menu highlights include boudin pastelitos (meat pies using Cajun sausage), baleadas layered with beans and roasted pork, crawfish boils, oyster roasts, and plates featuring coconut, plantain, and other tropical Caribbean flavors. Aguilar intentionally frames the concept as Honduran Creole to emphasize the shared Creole and African diaspora heritage between Honduras and Louisiana. To fund the buildout she launched a GoFundMe seeking $50,000 for a trailer, permits, licenses, and equipment, and has supported the project through scholarships and grants that included a culinary scholarship with an accompanying internship, a bread-making grant for study in France, and a recent award to help buy truck equipment; she also promotes her cooking through videos, culinary history writing, food styling, and an electronic cookbook." - Nadia Chaudhury
