"An upcoming Austin food truck planned to open in fall 2024 by Chef Grace Aguilar will showcase Honduran Creole cuisine that blends her first-generation Honduran roots with the Creole flavors she grew up with in New Orleans. Menu highlights include boudin pastelitos (meat pies using Cajun sausage), baleadas layered with beans and roasted pork, crawfish boils, oyster roasts, and plates featuring coconut, plantain, and other tropical Caribbean flavors. Aguilar intentionally frames the concept as Honduran Creole to emphasize the shared Creole and African diaspora heritage between Honduras and Louisiana.
