"Arriving this week in Tysons Corner, I learned that Santouka is making its anticipated area debut with a new outpost in the modern Boro mixed-use development. The respected Japan-based chain, which began in Sapporo in 1983 and has grown to 61 locations worldwide, specializes in tonkotsu — a pearly white broth made by simmering pork bones for 20 hours. The Tysons location opens Wednesday, August 12 at 1636 Boro Place and will be open daily from 11 a.m. to 9 p.m., offering limited indoor/outdoor seating as well as takeout and delivery. Flavor options include salt (shio), soy sauce (shoyu), fermented soy bean paste (miso), and spicy miso (karamiso), and customers can top a hefty heap of ramen noodles with pork cheek, green onions, bamboo, and egg. The menu also features traditional Japanese sides like pork and chicken gyoza, karaage, and rice bowls topped with grilled salmon or pork belly.
