"Founded in 2019 by cousins Bhagyesh and Lay Patel, this fast-growing, Gujarat-focused, egg-centric restaurant chain doesn’t serve breakfast (it opens at 11 a.m.) but instead specializes exclusively in Gujarati egg recipes—egg bhurji; lachko (soft-cooked eggs in a vibrant green chili gravy); masala egg kheema; bread omelets; cheese katori; lava pulav; and surti gotalo—often unapologetically spicy and richly spiced. The menu is intentionally tailored to South Asian palates (many locations are placed in suburbs with dense Indian populations such as Schaumburg, downtown Chicago, Sugarland, and Brampton), and the brand has added a robust egg-free vegetarian section to respect cultural dietary sensitivities.
