"At 901 West Lake Street in Minneapolis, Meyvn opened this morning, introducing wood-fired, Montreal-style bagels and a broader exploration of Jewish cuisine. The restaurant is serving bagels, deli sandwiches, raw oysters and other interpretations of Jewish dishes from 7 am to 10 pm tonight, and will generally open at 7 am (every day except the 4th) and stay open until 10 or 11 pm. Chef Adam Eaton, an Eater Young Guns semifinalist, is leading the kitchen while restaurateur Tim Niver and hospitality maven Laurel Elm oversee operations. The ambitious plan is to both master a proper bagel—aiming to stand out in a city that already has a couple of decent contenders—and to explore Jewish cuisine through a fine-dining lens within a mainly counter-service format.
