"Housed in a historic downtown Snoqualmie building that once served as a bank, police station, and city hall, this spot is Dave Van Storm’s take on “Cascadian barbecue,” and it’s indulgent and inventive: I loved the devastatingly tender 12-hour smoked brisket, Filipino abodo pork shank, chimichurri pulled pork, and a burnt-ends chili drizzled with provolone Whiz and poured over a chunk of secret cornbread. The signature Dave’s Way—a half-pound stack of luscious brisket with roasted onions, pickled peppers, black pepper mayo, and Whiz on light rye—is a must, and the restaurant posts occasional IG specials (smoked chicken, cheeseburgers, even whole pig roasts). Note the hours: it closes at 2 p.m. on Sundays (and 7 p.m. Wednesday–Saturday), so time your visit accordingly, and definitely order some meat to go." - Meg van Huygen
