"Slated to open this spring in Saint-Henri at 3981 Notre-Dame West, Evalina’s is a collaboration between Arthur’s Nosh Bar owners Alex Cohen and Raegan Steinberg and Shah Kash and Paulina DiCapua from the neighbouring progressive art space The Letter Bet. The menu will reflect a multitude of global influences, with a particular focus on the historical intersections between Middle Eastern spice-trade routes and Latin America—an approach the team illustrates by noting dishes like tacos al pastor have roots in Lebanese immigration to Mexico. Cohen and Steinberg intend to pull equally from both cuisines and are planning seafood-forward offerings such as octopus, shrimp, and aguachiles, with most ingredients cooked over charcoal on a Japanese yakitori grill. They also plan to serve flatbread tortillas, “Americana-style” desserts, and a range of mezcal, cocktails, and private-import natural wines, while leaning into nighttime service as a new culinary direction for the duo." - Audrey Carleton
