"When I first had their Beijing duck — after the restaurant moved from a much smaller spot in Independence — the skin was penny-toned, a sign of a delicate glaze and freshness; I enjoyed building bao buns with hoisin and scallions, while the pickings from the carcass were turned into a stir-fry to stuff into lettuce cups.
