"As the smaller sibling to Winnetka’s Pomeroy, Petit Pomeroy reverse-engineers the usual urban-to-suburban arc and is scheduled to open mid-September at 748 N. State Street. I see it as a classic French bistro—more intimate (90 seats versus 280) with a second-floor kitchen about a quarter the size of Winnetka’s—where the menu has been pared down to focus on the restaurant’s greatest hits rather than a sprawling roster. Dishes making the move include the warm tomato tart with dried heirloom tomatoes, fromage blanc, and herbes de Provence inside a puff pastry shell, and Winnetka’s top-selling short rib Bourguignon with pommes purée (they sold 48 in one night); other bistro classics such as bouillabaisse and escargots will also be offered. Beverages emphasize French wines, including sparkling and Champagne, alongside cocktails like the French 75, Le Spritz, and Le Pamplemousse. The interior pairs red leather banquettes and booths with bistro-style chairs, brass railings, vintage posters, and wood paneling; an eight-seat bar and a second-floor perch with views of Holy Name Cathedral are intended to deliver the room’s dramatic “wow” factor. The project builds on the success of Winnetka’s Pomeroy, Ballyhoo Hospitality’s highest-grossing restaurant since opening in September 2021, which helped prompt bringing the concept into the city." - Lisa Shames
