"Le Cowboy is currently undergoing a pop-up residency at East Austin wine bar Apt 115. This residency, originally set to end in 2024, has been extended through January 2025. There are a la carte and $75 prix fixe menus, previewing dishes from the Le Cowboy restaurant, including items like squid ink tagliolini, ragu alla bolognese with garganelli, and chicken parms with fettuccine alfredo. Meals are complemented by wine pairings chosen by Apt owner Joe Pannenbacker.
