"An East Austin wine bar is hosting the chef’s pop-up residency (originally slated to end in late 2024) through Friday, January 31, 2025, offering a la carte and a $75 prix fixe menus that preview dishes intended for the planned restaurant. Menu highlights include pasta such as squid ink tagliolini and ragu alla bolognese with garganelli; chicken parms with fettuccine alfredo; and bread. Wine pairings are curated by the bar’s owner, Joe Pannenbacker, with a daily option for $50 or a “fancy” pairing for $100. Service hours for the residency are 5 to 10 p.m., Tuesday through Saturday; reservations are available online and there is some room for walk-ins.
