"Opening Friday (November 2), I note État de Choc is a new artisanal chocolate-maker on St-Laurent in Little Italy at 6466 St-Laurent. It will sell mostly bars, mini-bars, and “lingots” (small chocolate bites, not a chunky bar comparable to a gold ingot), and the chocolatiers aren’t afraid to experiment — flavours include hops, corn, white curry, and wasabi — while also offering purer cocoa options and classics like strawberry, maple, and coffee. The shop is talking a big quality game, promising carefully chosen base products and placing an emphasis on traceability. The space near Beaubien Street is primarily a boutique but will also offer occasional events, including tastings and chocolate-making classes for both kids and adults. Quebec’s business registry lists Maud Gaudreau as the owner, and available online information suggests she brings experience from Chocolats Geneviève Grandbois. Hours are 10 a.m. to 6 p.m. Tuesday and Wednesday, 10 a.m. to 8 p.m. Thursday and Friday, and 10 a.m. to 5 p.m. Saturday and Sunday." - Tim Forster
