"Ramen chain Ippudo has opened a vegan offshoot in Dumbo (hence the “v” in the name). Though the environment feels a bit corporate, there’s a lot worth trudging through the touristy area to enjoy. Dishes like the signature “tonkatsu” use tofu and feature vegan noodles, marinated carrots, and fried enoki mushrooms.
