"A global Mongolian hot-pot chain is opening its first Boston location in Chinatown at 693 Washington St., taking over a former storefront; an exact opening date is still to be announced. Affiliated with Cambridge’s Happy Lamb Hot Pot but distinct from the former Little Lamb (now Hulun Bier) in Beacon Hill, the restaurant is known for its choice of base broths (original, spicy, or a half-and-half combo) and a broad selection of meats, seafood, vegetables, and noodles meant to be cooked at the table. Meats are sliced very thinly so they typically cook in about 10–15 seconds, reducing concerns about undercooking. The chain already operates across the U.S., Canada, China, and Japan." - Dana Hatic
