"An east London vegetarian restaurant's Dalston site will debut a trademarked 'B12 Burger' — billed as the UK’s first-ever meatless raw 'bleeding' burger — from 24 February in collaboration with plant-based developer Moving Mountains. The patty highlights vitamin B12 as its hero ingredient and combines mushroom with 20g of proteins (pea, potato, wheat and soy), plus coconut oil, beetroot (used to create the 'bleeding' effect), flavouring, sugar, colouring, preservative, herbs, vegetable oil, water and spices. The developers claim it smells appealing when raw, sizzles to a golden brown when cooked and offers a burger-like experience without animal products or any cholesterol, antibiotics or hormones. The technique is explicitly inspired by the US Impossible Burger trend, framing the launch as a question of whether diners are ready to 'bite into the future.'" - Adam Coghlan
