"A perennial pop-up that Seattle has followed on Instagram will transition from a spot you have to watch social media to know when it’s happening into a brick-and-mortar in Tangletown, with a timeline to open in mid-December, according to the Seattle Times. The new shop will take over the space formerly occupied by Ethan Stowell’s MKT. The pizza is Detroit-style, made by self-taught pizzaiolo Derek Reiff, who started selling pies in spring 2020 — it was a pandemic hobby, he tells the Times — and has been selling them whenever he had time outside his day job as a web developer; the pop-ups would frequently sell out in under an hour and the only way to find out was to keep an eye on Instagram for a heads-up. To start, the menu will include four pies, including white pizza with sausage, red onion jam, Calabrian chili peppers and ricotta cheese, and pepperoni cups with Castelvetrano olives; the operation will offer takeout and dine-in.
