"Opening Thursday at 7701 East Colfax Avenue, I plan to visit Pablo’s Coffee’s third location, a combined cafe, roastery, and training facility that will offer workshops, cuppings, and roasting demonstrations as well as a new public gathering space; the Denver-based business started in 1995, already has two other shops (6th Avenue & Washington Street and 13th & Pennsylvania), sells its roasts to more than 150 shops and restaurants, and will feature opening promotions of $1 coffees (Thursday–Friday) followed by $2 lattes and $10 select bags over the weekend." - Josie Sexton
