"Started in 2020 as a relief pop-up for essential workers and later expanded into a roving restaurant, this Peruvian project is the personal culinary storytelling of chef Arnaldo Castillo, who left a Ponce City Market post to pursue it full-time. Traveling to pop up around Atlanta, the menus showcase deeply personal and classic Peruvian dishes — ceviche clásico, jamón del país sandwiches, choros a la chorrillana (mussel escabeche on sourdough toast), and causa limeña — with plans to eventually become a permanent homage to Lima and northern Peru." - Beth McKibben
