"Chef Kazuyuki “Kaz” Ishikawa and partner Eli Ramos have reopened the intimate Bywater omakase at 3214 Burgundy Street, restoring the prior 12-seat dining-bar format. Ishikawa presents eye-popping plates of contemporary, creative sushi across a multi-course omakase; the only way to reserve is to text or call Ramos at (504) 259-2676, though a response is not guaranteed. The venue is currently open Friday and Saturday with seatings at 6 p.m. and 8:30 p.m.; the best bet is to try for a walk-in or secure a reservation in person.
