"Starting as a small Georgetown restaurant in 2011 by Mashiko sushi chef Hajime Sato, Katsu Burger has grown into a local fast-food chain known for its Japanese-influenced menu with breaded katsu burgers, nori fries, and green tea shakes; burgers are prepared katsu style—dipped in tempura batter, coated in panko crumbs, then deep-fried—and the chain says it serves meats free from growth hormones and antibiotics. It has built a reputation for decadent offerings such as the Mt. Fuji, a burger stuffed with three katsu patties (chicken, beef, and pork) topped with egg, bacon, cheese, wasabi mayo, and tonkatsu sauce, and the restaurant is no stranger to experimentation—its 2018 Ballard expansion added bento, cocktails, and even a sushi bar, and several outposts have featured varying booze, snacks, and milkshake flavors." - Gabe Guarente
